Introduction

Yummy, easy, one dish dinner. Goes well with sauteed asparagus, or a simple green salad. Yummy, easy, one dish dinner. Goes well with sauteed asparagus, or a simple green salad.

Ingredients

    1 tablespoon olive oil (light)
    4 lean, bone in pork chops
    1 medium onion, chopped
    1 cup, uncooked long grain brown rice
    2 1/2 cups fat-free chicken stock
    1 cup orange juice
    3 tablespoons chopped fresh parsley
    4 orange slices

Directions

Heat oil in a large skillet over medium-high heat. Add pork chops and cook until well browned on both sides.

Add the onion and rice to the skillet and stir until rice is browned. Stir in the broth, orange juice and 2 tablespoons parsley and heat to a boil. Reduce the heat to low. Cover and cook for 20 minutes or until pork is cooked through and the rice is tender.

Top with orange slices and sprinkle with remaining parsley.

Makes 4 servings.

    After following the recipe, it was like soup. I had to cook it uncovered for another 20 minutes. Flavor was OK. My husband expected more orange flavor. I added 2 cloves of garlic, too. - 4/5/11
