Ingredients

    3 cups brown rice
    1 can red kidney beans, rinsed and drained
    1 large tomato, seeded and diced
    1/2 cup diced or shredded sharp cheddar cheese
    1/2 cup sliced green onion
    1 avocado, diced
    1/3 cup NAKANO rice vinegar (original or red pepper)
    1/2 tsp. salt and ground cumin
    1 T minced jalopenos
    1/8 tsp. garlic powder

Directions

In a large bowl, combine rice, beans, tomato, cheese, onion, and avocado. In small bowl, combine rice vinegar, oil, salt, cumin, jalopeno and garlic. Mix well. Drizzle over salad and toss to coat.

Makes 6 generous 1 cup servings.
