Ingredients

1 small potato
2 T chopped onion
1/4 c chopped broccoli (I prefer florets)
1 sm clove garlic, chopped
1/2 chicken breast skin, bone and all visible fat removed
3 T fat free sour cream
salt and pepper to taste
Directions
bake potato until done. saute onion, broccoli and garlic until tender. add chopped chicken and saute until warm. Cut potato in 1/2 and scoop out all the insides. mash potato insides with sour cream and salt/pepper. add the chicken and broccoli mixture and mix gently. Put mixture back into the potato skins. Bake at 400º for 10-15 min.
