Slow-cooked lentils, easily made in a Crock-Pot Slow-cooked lentils, easily made in a Crock-Pot
Number of Servings: 8


    Lentils, 2.5 cup
    Sweet potato, 2, 5" long
    Potato, raw, 2 large (3" to 4-1/4" dia.)
    Onions, raw, 2 medium (2-1/2" dia)
    Garlic, 8 cloves
    Tomato Paste, 1 can (6 oz)
    Cumin seed, 1 tbsp
    Salt, 1 tbsp
    Pepper, black, 3 tsp
    Water, tap, 4.5 cup (8 fl oz)
    Lemon Juice, 2 fl oz
    Ground tumeric, 2 tsp
    Ginger, ground, 1 tsp
    Olive Oil, 3 tbsp


Peel and cut sweet potatoes and potatoes into pieces slightly smaller than a golf ball. Combine all ingredients into slow cooker except green beans. Cover and cook on low for 7-8 hours until vegetables are tender. If your crockpot cooks hotter check at 6 hours. Check every two hours, adding more spices to taste.
