Introduction

Ingredients

    1 lb Pork Tenderloin cut into 1x1" cubes
    2 cloves of garlic - diced
    1 cup - diced onion
    1 Green Bell peppers
    1 Red Bell Peppers
    1 Yellow Bell Pepper
    1 Jalapeno Pepper
    2 Serrano Peppers
    1 Cup Brown Rice
    1 1/2 Cup Black Beans
    2 Tbsp Sour Cream - reduced fat
    2 Tbsp Pace Chunky Salsa
    1/2 cup Shredded Chedder cheese
    1 medium tomato - seeded and diced
    2 Tbsp of Cilantro

Directions

Take all peppers and arrange on the grill. Roast the peppers on medium heat for approx. 30 min (can also be done on a cookie sheet in the oven) You will need to turn occasionally, some blackening is ok.

While peppers are roasting, cook rice according to package directions and warm Black Beans on the stove.

When peppers are done, remove from grill or oven and submerge in cold water. Use a knife to carefully remove skins and chop. Set aside

In a large saute Pan, spray with Pam, add garlic and onions. Cook until soft, about 3 minutes. Add Pork. Cook pork with onions and garlic, stirring occasionaly - 7 min
Add peppers to the Pork. Let cook together on medium heat another 7-10 min, until pork is done and peppers have blended.

In bowl, put a layer of brown rice, layer of black beans, scoop of pork and peppers. Add a scoop of cheese, salsa, sour cream cilantro and tomato. EAT!
