This salad is very delicous and quite healthy! The only thing to feel guilty about... EXCEPT the crispy chicken.
Used Newman's Own dressing and mixed night before for lunch next day to let flavors meld and no sogginess!
You can thin out the sauce with water if you do not want to use hot sauce.
Can swap crumbles with beans or grains that have at least 8 protein but will have probably double the calories than crumbles. Include a piece of whole wheat bread to reach the 10 fiber mark!
Swap out any beans of your choice as long as they closely match the nutritional profile: 150 cals / 11 prot / 7 fib.
You can use any sauce you like but I prefer something with chunky veggies. I like A LOT of sauce but if you don't you can easily cut it down to just 4 oz. You can add in any extra veggies you like too.
Threw together left over squash & chickpeas then used Cheezy Broccoli Quinoa Burgers as guide to fill them out.

Classic comfort diner food, just got a make-over... the low fat tuna melt. Adding veggies to your tuna, replacing the full fat cheese and mayonnaise with light mayo and cheese and serving it opened faced makes this classic sandwich lower in fat and Weight Watcher friendly. Use your favorite whole grain bread and serve with a salad or a cup of soup on the side.
