This is always a big hit-serve over spring greens with sliced tomatoes...or as a sandwich. We use a high protein whole wheat bread, and add sliced tomatoes and spinach greens instead of lettuce.
I also will substitute a chopped apple for the carrots, and chopped pecans for the almonds.
Very easy to make! Very filling and most of all, DELICIOUS! My kids even loved it! Serves as a whole meal.
