This chicken salad with fruit and nuts is one of the most requested from a catering friend!
Can be used right away but if you make it a few days prior and let it sit in the fridge it will taste so much better!!
Found a similar recipe online and this is my variation of it. This is SUPER good! It sounds strange to add maple syrup to chili, but it's REALLY good!!
Deliciously protein packed salad. Beautiful colors and scrumptious taste. This salad can easily be modified to fit what you have on hand. I only had chickpeas but you can easily use other beans. Makes 16 servings (calculated as a side dish).
Add oil to large skillet over medium high heat (5-7). Add all vegetables, and herbs (other than potatoes and zuchini) coarsely diced or sliced as desired. Saute until slightly tender. Season with salt and pepper. Place all vegetables in a crock pot. Add chicken (diced), Artichoke hearts drained and sliced,. Add White kidney beans, and Petite Diced Tomatos including juice. Cook for 4 hours. Turn off add diced potatos and sliced zuchini and let steep for 30 mins. Serve.

This is a great soup to make in large batches. It freezes well and is good in the summer or winter. It is super filling and healthy! Substitute the sausage with smoked sausage links if desired... or even lean ground beef.
This delicious soup has a ton of veggies in it and is easy to make. Feel free to change up the veggies with what you have handy. Really good on cold days with fresh warm bread!

With bright red cranberries, green peppers, and a sweet & spicy kick, this makes a great alternative to heavy winter appetizers. Serve with tortilla or pita chips, top grilled chicken, add to a salad, or toss into quesadillas.
Use an immersion blender to blend all ingredients. Add a cup of crushed ice if desired.
