cucumbers, with peel, raw, 2 cup
*apple cider vinegar, 1 cup
Red Onion Raw (1/4 cup, 40g or 1.4oz), 0.25 cup
*Splenda Sugar Blend for Baking, 12 tsp
Simple, savory, and hearty as it is, but certainly ripe for your own additons and subtractions. Good source of iron and other nutrients you might be tracking - easy to reduce the sodium by changing one broth component.
Soup full of good stuff: the fennel will help stimulate the secretion of bile (the fluid that carries waste out of the liver),; parsley is believed to act as a diuretic; compounds in garlic, shitake mushrooms and cabbage support liver function.
Combine all ingredients except olive oil. At the very last drizzle slowly while whisking.
We make this with our Vitamix blender using leftover sweet potato, apple, and onions from our boiled dinners, so our ingredients were boiled the night before.
This is a hearty soup that is pretty good for you too! I love it because it is thick and warm and perfect for these cold winter nights. My wife cooks this in her cast iron dutch oven.
It tastes great the day it is made but even better the next day, like many things.
