I had some leftover turkey and decided to make a healthy turkey soup. I used my own homemade broth left over from roasting a turkey. It had been refrigerated and I skimmed all the fat off before using. You could use all canned broth if wanted.
This soup was originally supposed to be with lentils, but since I don't like them, my lovely husband was nice enough to substitute barley instead. It makes ALOT and it's very hearty.

Recipe from Giada de Laurentis, with some modifications based on what I had on hand and what ingredients I could actually get my hands on in this sprawling metropolis of Deming, NM. (Having since gone vegetarian, I omitted the original pancetta/bacon).
This is a great, thick & hearty soup. I prefer to use an immersion blender once it's done cooking to blend for a more even consistency. We've omitted the bacon from the original as we're now vegetarian.
"Everything but the Kitchen Sink". Loaded with beans and veggies - this chili sits comfortably in the stomach without being a "bother". I put it whatever canned beans I have on hand and use Tastefully Simple's Wahoo Chili Spice for my powder.
Food processed spinach and zucchini makes these green. Sundried tomato and feta add to the flavors
My sister shared this with me--because I love coleslaw from KFC--I changed it a bunch and like what I have now. I can have a whole cup of it for less than 100 calories!!
