A surprisingly yummy soup I came up with one night when I was feeling sick and had very limited ingredients. This is possibly the simplest soup to make: throw everything in and cook! This is for one serving, but could easily be multiplied for however many servings you want.
Thrown together one night, this is a DELICIOUS and quick single serving soup (easily adapted for more servings) - the only problem was waiting for it to cool enough to eat!
This is my take on the traditional mediterranean salad. I found that by adding more vegetables it made the salad more filling and satisfying.
add all the ingredients into a food processor. Pulse on low until ingredients are chopped into small pieces. Add 1 tsp of salt at a time until you reach your level of saltiness. refrigerate for about 2 hours and serve! This is the most amazing fresh salsa you will ever taste!

Really easy to make, super delicious! To make this a complete meal add chicken and a corn tortilla. Because amount of tortilla and chicken relative to soup will alter nutritional info, I didn't include those in the nutritional information math.
