This is a healthier twist on the Coconut Curry Noodle Bowl receipe I found. This has no coconut in it because of the high fat/sat fat content.
From Every Day with Rachael Ray. Hers called for vegetable broth, but I use chicken for flavor and ease (I always have it on hand).

Adapted from Sarah Moulton's Weeknight Meals. I added the shrimp and made it gluten-free by using Tamari instead of regular soy sauce.

This low calorie, low fat soup is made with things you would have on hand. Season to your taste with your favorite herbs to make it your own.
This aromatic and flavorful dish is surprisingly low in calories and fat content. It can be served as an appetizer or when paired with a nice salad, it makes a nice entree. At roughly 115 calories per serving, you can even have guilt-free seconds!
Our family gatherings were never complete without a Waldorf Salad loaded with apples, nuts and a sweetened mayonnaise dressing. This is my "healthy makeover" version. It looks nothing like Grandmother's version, but it captures the flavors in a delightfully lighter combination.

I wanted to make Miso Soup, but my grocery didn't carry Miso so I made the soup without it. My hubby told me with no miso it had to be called "no-so" soup instead. It still makes a yummy lunch.
