I use whatever meats I already have in the house or in the fridge. Sometimes there's ground beef, ground turkey, sausage, chicken, steak, etc. This is a rough idea of the ingredients I use, but it's meant to be a "leftover/scraps chili" and it never tastes exactly the same.
