These are a variation on banana muffins, using flax seed and olive oil. They are a bit high in fat, but it's almost all good fat.
Cook potatoes in a pan with the oil. Add the eggs with rest of the ingredients after potatoes are cooked for 7 minutes and spread evenly on top of potatoes and cover and cook on low flame for 10 minutes flipping at the end of 7 minutes.
I got the idea for this from a magazine, but didn't have most of what went in it on hand, so I overhauled the idea and flavored it with what I had around! The result is a super healthy and filling lunch pie with four giant servings, perfect for an afternoon coffee session with the girls! :)
Yummy, low calorie and low fat breakfast option! If you want to make it more filling- add 1/4 cup of old fashioned oats to the eggs before you put them in the pan!
