Ingredients

* 4 (1 1/2 to 2 pounds) very ripe bananas
* 1 cup packed dark brown sugar
* 1/2 cup olive oil
* 1 large egg
* 1 cup all-purpose flour
* 1 cup whole-wheat flour
* 1 teaspoon baking powder
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 tsp ground cinnamon
* 1/2 cup nonfat plain Greek-style yogurt
* 1 tablespoon pure vanilla extract
* 1/3 cup ground flax seeds
Directions
Preheat Oven to 350 degrees F.
Place muffin liners in muffin pans, or grease, if desired.
Mash the bananas in an electric mixer at a medium-low speed, until smooth. Add sugar, olive oil & egg, and mix until well blended.
Add flours, baking soda, baking powder & cinnamon and mix at a low speed until combined.
Add yogurt & vanilla, mix on low until combined.
Fill muffin cups to 3/4 full.
Bake at 350 degrees for 25 minutes, or until a toothpick comes out clean.
