**My whole family, kids included, liked this dish. Originally the dish called for whole eggs, whole-fat cheese and pork sausage, but I made some changes so that we can still enjoy it while watching our waistline!** Because you do all the prep the night before, this dish makes the mornings easier! Recipe is easy to alter to make a smaller casserole (I have halved and quartered this recipe before).
In a large skillet, brown sausage over medium heat until meat is no longer pink. On a lightly floured surface, unroll two tubes of reduced fat crescent rolls and seal seams. Cut into 18 equal size pieces. Grease muffin tin. Place a piece of dough in muffin tin, fill with about 2 tsp. of sausage. In a large bowl combine eggs and cheeses. Spoon 2 tsp. over sausage mixture and sprinkle with paprika. Bake at 375 for 20-25 mins. or until a knife inserted comes out clean. Cool for 5 mins before removing from pans.
