An ingenious way to up the protein content of your sunday morning breakfast. A little bit of work (not that much, really) and super tasty. Batter also works for pancakes
This is adapted from the Once a Month Cooking book. So it's great to make 2 and freeze one.
These are low-fat, low sugar, and super yummy. In place of butter or oil; use applesauce. Next time I will use just egg whites to try to lighten them up just a tad bit more.
