This was my first attempt to create a very high fiber, low fat muffin. Very tasty and moist - could lower the fat even more by leaving out the oil and wheatgerm.
Consisting of mostly egg whites and a few egg yokes for balance, this high protein and low calorie easy breakfast is a great start to the day. I like to make up a big batch (about 24 muffin tins worth) on Sundays to get me through the next few weeks. They freeze great.
Blend ingredients adding more or little less water to make smoothie the thickness that you like.

There are some changes that would make it even healthier. If you make your own crust with whole wheat flour, for example, that would really increase the fiber content.
