Ingredients

    2 1/2 cups all purpose flour
    1 cup whole wheat flour
    1/4 cup flax seed, milled
    1/4 cup wheat germ
    2 tbsp baking powder
    1 tsp salt
    5 eggs, separated
    3 1/2 cups buttermilk (I used 1 cup buttermilk and 2 1/2 cups skim milk with 2 tbsp cider vinegar)
    1 cup cooking oil
    4 tbsp soy protein powder
    3 scoops (60g) whey protein vanilla drink mix


Directions

Mix together dry ingredients. Set aside.
Beat egg whites until stiff. Set aside.
Beat egg yolks, then add buttermilk, oil and proteins. Mix well.
Add dry ingredients and stir until just mixed.
Fold in egg whites.
Cook in belgian waffle maker 2 - 2 1/2 min. for each.
Makes 12 large waffles (even 1/2 a waffle will fill you up)
