I used this recipe to "hide' veggies for my children. They absolutely love these muffins. The recipe makes a LOT of muffins. I use different size muffin pans so I'm not exactly sure "how many servings." I freeze some of them for a later time.
This is a lightened up (lower fat, sugar free) version of an old classic with a few changes for the holidays. It has 1/2 lowfat mayo and 1/2 regular mayo to cut some of the fat. Instead of sugar, I subsituted splenda. For the holidays I substitute dried cranberries in place of raisins and substitute Lite Raspberry Pomegranate Vinaigrette Salad Dressing for some of the apple cider vinegar. This makes a very festive side dish which is great for a holiday brunch, luncheon or dinner.
