I found this while looking through some of my mother's really, REALLY old cookbooks. It looked interesting so I thought I'd put the info in here and see what came up before I made it. I don't think the nutritional info is too bad to be a Spark recipe. I'll substitute 1/2 cup of Splenda brown sugar blend for 1 cup of dark brown sugar and I'm using Smart Balance unsalted butter blend for real butter. The original recipe suggests using a vanilla glaze but I think I'll skip that!
A pancake like batter poured over fresh berries and baking until puffed and golden brown. The fruit rises to the top, leaving a soft texture somewhere between custard and cake.
Slightly modified version- minus 1/3 butter and 1/4 c sugar. Would NOT recommend substituting part-skim ricotta for whole milk, as the extra liquid will result in cake not baking correctly and overflowing loaf pan, resulting in a not very pretty loaf.

If whole milk is NOT used, the pudding will be runny and won't hold together, so do not substitute to cut fat.

This dessert tastes just like a Peanut Butter and Jam sandwich, but better. If you are a PB & J lover you will truely enjoy this. Warning: Not for a person on a strict diet. I make this for family night comfort food. The day I call my cheat day! With this dessert it really is a CHEAT DAY!! So take a day off and indulge in an old favourite PB & J
I found this recipe on the Eagle Brand website. I adjusted it so I would be able to enjoy it too. (The original version is in a blog on my page) I don't know how to figure out the nutritional information for it. The original recipes did not have this information either. I eat a very small slice occasionally, but it tastes really good!! Enjoy!
