This is a slimmed down version of a fattening Louisiana delight. Yummy, quick and easy. Serve over brown rice and garnish with green onions. Or toss with whole wheat pasta.

These are super yummy! You can also substitute cottage cheese for the ricotta and it turns out very tasty. As a time-saver, either bake the chicken and shred the night before and refrigerate until use - or use a rotisserie chicken from the grocery deli!
I'm from New Orleans and red beans and rice is a Monday tradition. I love this recipe! It's full of protein, filling and full of flavor....what more could you want?
I got it from the Big Orange Book, but I'm allergic to dairy so it has some variation. Also some of the things Rachel does it beyong my knowledge of cooking, so this is a easier version.
