Babas au rhum are lovely yeast-risen cakes studded with dried fruit and soaked in hot rum syrup. Once the darling of French cuisine, they fell out of favor but it is so good to see them back and as popular as ever.
This recipe features the delicate flavor of citrus, with just a hint of orange and lemon zest. Likewise, a small amount of warm vanilla has been added to the soaking syrup to cut down on the rum’s boldness. The result is a baba rum full of complex layers of flavor, while still holding to the traditional French recipe.
Rum Baba are also known as Baba aux Rhum.
I was watching an American TV show recently and missed a lot of the plot, as I was distracted by the amount of waffle-eating going on. I tried to prevent myself getting a waffle iron; I’d made that mistake once before. Reader, I didn’t succeed. But I vowed that this time I wouldn’t use it once then consign it to a cupboard under the stairs, and I’ve been as good as my word and have turned into something of a weekend waffler.

Standard ratatouille based on recipe in food processor cookbook from the 1970s. Can be tweaked a variety of ways. 7 or more sevings depending on size of vegetables.
Decadent, but delicious. Make smaller portion and serve with large salad for dinner. Original recipe calls for baguette but I substituted reduced calorie bread. It saves over 200 calories. Can save calories with redeuced calorie provolone or other cheese.
Definitely not the healthiest version (compared to others I have seen on SP). But it's very close in taste to the real thing (without needed a side of heart surgeon afterwards!!) Good for a once-a-week lunch treat.
