This is a great side dish for a picnic or BBQ. Tomatoes always say summer to me.

A German-Italian couple, who lived next door to me one summer during an ESL course in England, shared this recipe with me. All root vegetables with only the teensiest amount of butter and salt per serving, this is one of the most wholesome, warming soups I've ever experienced. Great in winter and fall, this soup is sure to please all - okay, maybe not the kiddies but there are always exceptions!

Not a calorie saver, but I brown the meat in the microwave in the Tupperware Stackcooker - so the grease drains away while it cooks.

I make this ahead and then freeze into 1-2 serving size portions

This recipe uses a bread machine to make the dough. If you are adept and dough without the machine, go ahead and make it by hand.

I had leftover Eggplant and no parmesan so this is what I came up with.
