Combine eggs and milk into one bowl. Combine panko crumbs, parsley, pepper, and sea salt (optional). Dip each piece of chicken into milk mixture, panko mixture, milk mixture, and then again the panko mixture. Lightly brown chicken in a skillet with the olive oil until the outside is lightly browned. Place browned chicken into a casserole dish. Cover with Parmesan cheese, then spinach, and then spaghetti sauce. Bake at 375 for 20 minutes.
