A slimmed down recipe using Spaghetti Squash, rather than pasta. AND, it's yummy.
If you use Organic or low salt Tomato sauce and puree, you'll substantially cut the sodium in the recipe.
NOTE: recipe says 1.5 large onion and pepper. Use as much as you want. They'll add negligible calories, no fat and they're good for you. I guess my philosophy is, play with your food and make it your own. vary amounts , cut in different size pieces...whatever works for you!
Main course, or side dish. Formal dinner, or picnic. Cook the pasta al dente, drain and shock w/cold running water until the pasta is cool. Don't overcook, or your salad will get gummy. Barf! Coarse chop the peppers, onions, anchovies (If you don't like...don't use. But, if you don't you're a puss.) Peel and split the garlic length-wise. Remove the snappers (green/brown center piece), smash and finely chop the garlic. Use more if you're so inclined, but not less. Roll the fresh basil leaves into a 'cigar' and slice very fine strips. Redrain the pasta well. Put into a large mixing bowl. Add dressing and toss 'til coated. Toss in the rest and fold them in.
Cook & drain spaghetti according to package directions (11 minutes for firm); chop all vegetables; place all ingredients into large bowl and mix well. Makes 12 1-cup servings.
This take on lasagna is ultra easy, low in fat, calories, and is easy to pop in the oven for future meals! It is also delicious without meat and takes less time in the oven than most. Using Low-Fat Cottage or Part-Skim Ricotta cheese will minimize the calories without sacrificing flavor or texture. I like to use a glass bread pan in the oven that can go straight into the refridgerator and freezer for later. This recipe is super easy to prepare and pop in the oven if you're cooking a couple of other things for the week at the same time as I try to do.
Also, the cheese mixture is what makes the meal. The added oregano and garlic salt make the cottage cheese **excellent** for stuffed shells, preparing a cannelloni - like appetizer/finger food, or dip for veggies (much healthier than sour cream and onion dip).
