I servce this over a slice of Italian bread and and add a tsp or so of A1. My husband enjoys adding some provolone or montery jack cheese.
Healthier choices in a traditional favourite. Add chopped veggies to boost your fibre and taste (I have to grind them right into the sauce to get my kids to eat them!). Another nutrient booster is to add a package of frozen spinach (well drained and chopped) to the cottage cheese mixture. Enjoy!
Preheat broiler overn, then combine whole eggs, egg whites and 2 Tbsp. Water in medium bowl and whisk well. In a medium ovenproof non-stick skillet, heat 1 Tbsp. oil over medium heat. Add onion and cook, stirring until it begins to soften, about 3 Minutes. Add broccoli and cook another 2 Minutes. Season with salt & pepper to taste. Pour Egg Mixture over vegetables in skillet, covering them evenly. Reduce the heat to medium low, cover, and let cook until the egg mixture has set around the edges of the pan, but is till somewhat liquid in the middle, about 8 minutes. Sprinkle with cheese. Place the skillet under the broiler about 2 incehes from the heat until the surface is set and golden brown, 1-2 Minutes. Do no over cook or the egg mixture will become tough. Cut into 4 equal wedges and serve.
Cook meat and peppers. put in bottom of a 9x 13 pan and sprinkel half cheese on top. . whip eggs with cream, salt, pepper. Pour on top of meat and peppers. sprinkle remaining cheese on the top. Bake 35-40 minutes.

Delicious, quick, can be made with italian turkey sausage instead of pork sausage - You'll have enough for your family and enough left over to freeze.
The only difference between this recipe and Chef Meg's is that I substitute veggie sausage for the ground beef.
Place 5 Lb of shrimp in shell into a baking dish.
Mix remaining ingredients together.
Pour over shrimp.
Cover and bake at 350 for 30 minutes for small shrimp or 45 minutes for large.
Dip out of sauce, peel and eat
