After tasting the delicious house salad from a local downtown Metuchen Restaurant, Main Street Trattoria, I knew I had to have a recipe on hand for this quick and healthy meal. It's not exactly the same, but I think my version comes pretty close. It is a great main course salad when served with flatbread or breadsticks.
Searched through my pantry to make a healthy dinner. Had a couple of tomatoes from my garden and an eggplant from the farmers market and voila, this recipe was born.
This is a recipe I adapted from a Cooking Light magazine issue. It can also be made without the chicken for a vegetarian dish. Without chicken the calories are reduced by 17 per serving.
Super easy pesto pasta. Can use whatever pasta you have on hand. Adding tomato, crushed red pepper kicks this up a bit.
Quick and easy dish. Serve with some wheat pasta on the side (not included)
