This is a delicious, hearty, heart warming soup. If you don't like kale, use any greens instead.

Stuffed shells are always a favorite at my house and this recipe--with some smart, lower fat substitutions--is really a low-guilt, delicious, creamy take on this Italian-style dish. With a good tomato-based sauce it's sure to be a winner. It also makes awesome leftovers.
This is a great way to just get rid of any veggies about to go bad! Just throw them in! Any combination works! You can also add Riccotta or Cottage if you prefer! This is a great recipe to be creative!
