Here we take basic lasagna ingredients—ricotta cheese, pasta and tomatoes—and skip the layering and long baking time to make a super-quick and satisfying meal for the whole family. To cut down on prep time, look for presliced mushrooms. For meat lovers, brown some crumbled turkey sausage along with the onions and garlic. Serve with: Steamed broccoli and whole-grain baguette.
This recipe is quick to make for vegans, or for meat lovers just grill a steak (beef/port/lamb), slice and throw into vegetable mix and serve over a bed of rice or pasta. You may use any vegetables that you have in the fridge/pantry.
Use bread machine dough cycle. Shape for pizza. Rise, add toppings and bake in oven.

This dish is absolutely to-die-for delicious, and great on a hot summer night. It is as packed with nutrients as it is with flavor!
I invented this recipe randomly one night after being inspired by the feta salad I picked up from Whole Foods.
Feel free to sub couscous for the orzo if you prefer.

If you only have ricotta OR mozzarella that is OK, just use .5 cup total cheese.
DO NOT sub artificial sweetener for the sugar... yeast cannot digest it, lol
I had a lot of trouble getting a no flour pizza crust to work. It kept sticking to my no-stick pan even when it was well oiled, and turned out soggy and limp. So I doctored it till it worked, but had to add whole wheat flour. Fine shredded Mozzarella is a MUST for this recipe. Don't use coarse shredded. Fine shredded cheese produces a more pleasant and consistent texture.
This is nothing like a real pizza crust. It's a bit spongy like an omelet and the browned areas are slightly chewy. If you can get past the texture it works well as a low carb pizza crust substitute.
Fresh veggies and shrimp in a light tomato sauce served over whole wheat pasta. Very yummy, even the teenagers loved it!
