Love alfredo, but hate the fat and calories? I know I do and I came up with this slimmed-down version so I could have my alfredo and eat it too! This is meant for one, but can easily be doubled or more if necessary.
Sub preferred salad dressing & change calories accordingly. Use wide-mouthed quart canning jars. Make individual salads & store in refrigerator for up to a week. I stay away from meat that may spoil more quickly such as turkey or chicken; this, of course, depends on how long your salads will be stored in your fridge.
From Fitness mag. they called for 14 oz light coconut milk but I used light soy milk and coconut extract. It would be creamier if you used the coconut milk or fat free half and half w/ extract but would add calories
As the weather heats up, this is a good cool meal for one with very little prep required.
