Based on a Paleo recipe, this recipe can be prepared without additional protein, or with 4 ounces (cooked) of whatever protein source you wish.
We really love traditional corn pie, but between the carbs in the pie crust and the corn, it no longer "fits" into a healthy eating plan. I like the Impossible Pies (both sweet and savory) and decided to experiment with the left-over corn and grilled chicken from dinner.
1 Brown Rice Tortilla GF
1/4 Lemon Juice and 1Tbs Psyllium Husk heated and disolved
2, 3oz Chicken Breast
1/2 Head of romain lettuce cooked
1/2 Roma Tomat sliced
Fresh Basil
Dill
Salt
1Tbs olive oil for pan Frying
Fresh strawberry and spinach salad packed with protein from grains and seeds. Enjoy at lunch or dinner!
My son's favorite sandwich filling. You can also add a teaspoon of chopped onion or shallots. Serve on whole wheat toast with lettuce.
Good for a light vegan lunch, stacks of broiled eggplant and tomatoes, basil and vegan parmesan get just a sprinkle of salt and pepper before being finished with balsamic and served warm. Makes a good appetizer too, just portion one stack per person instead of 6!
My mom loves stuffing as much as I abhor it - which is to say, a LOT - so it's no surprise that this loaf (heavily adapted from KAF) is a big hit with her! I made it with raisins, like her Thanksgiving recipe, and used fresh thyme from my garden, too!
