To make an economical soup, low in calories, fat and sodium but high in protein, and fiber I created this recipe. Hope you like it.
I'm a short little vegan chick and I usually eat like a rabbit. This dish is what I make when I want to be a carnivorous rabbit. Rawr!
This is adapted from AllRecipes. I used Toufayan whole wheat pita rounds and fat-free Greek yogurt. 1 serving is half a pita with 1/2 cup chicken spinach filling. This is adapted from AllRecipes. Very filling!
This would be good served with rice or bulgur, and sprinkled with grated cheese.

I wanted a hearty sauce that was filling. This is intended for lunch so that I would get my carbs in early in the day. I cannot eat onions or garlic so feel free to add these because they will not make a big difference in the nutritional factor. BUT please do not add salt until it is cooked and you have tasted it. You should have plenty of salt flavoring from the V8 and if you add salt you would greatly increase the sodium content.

the apples and onions make it go a long way and make for an interesting taste with the added cumin gives it a small kick. Sorry I can't spell
Served warm or cold this is great for making up when you have very little time to prepare or if you like to pre-make some lunches. I usually keep 2 servings for myself and send one with my husband for lunches.
3 oz salmon
2 cups Romaine Lettuce
10 slices cucumber
10 slices mushroom
1 slice onion
2 tbsp balsamic vinaigrette
2 tbsp Ranch dressing
