Taken from the Magic Pan Project Website with minor modifications since I can't find chicken fat. I made my own by using Crisco and half the chicken base to make the "chicken fat".
Plan ahead, short grain brown rice may take a long time to cook relative to a daintier rice like jasmine. Add the rice's cooking time to the cooking time and start prepping 10 minutes before the rice finishes and start cooking when the rice finishes on the heat (and is then taken off to rest for 10 minutes)
Delicious! Original recipe called for 2 cups of pumpkin. I was thinking about leaving the pumpkin out altogether but it's simply delicious with the 1 cup in it.
