This makes a huge amount; enough for a potluck or party, or do as I do, and make a big batch on Sunday, and then have tasty lunches all week.
I found this recipe and played around with it. I may change a few more things in it later depending on the taste.
Serve with 1/2 T of Light Lemon Herb Mayonnaise and this is one yumm-o sandwich!! (Calories are a little higher because I accounted for all the breading mixture, but not all of it will be used so the calorie count will be slightly lower.)
Tuna Salad with a little kick! Delicious with some Whole Grain Wheat Thins or Pita bread
Use Rock Fish or Cod.

Be sure to keep a watchful eye on it when it is on the upper rack under the broiler!
Delicious & quick dinner...just add a salad and you're done. This has a great bite to it...at first you say...yikes that's hot...then you want more!
Brown rice steamed in low-sodium chicken broth. Add in a cup (or more!) of veggies - I like to steam peas and corn - and a meat of your choice. I use shrimp, sometimes scallops, but you can use red meat or poultry or whatever strikes your fancy. Makes 3 servings at least, great to make ahead for lunches for the week!
this is a simple dish that you can spice up or keep simple. Change the fish that you use from time to time also as you wish.
sub that fatty mayo or miracle whip with some fat free plain greek yogurt. toss the egg yolk too. Instead of the usual plain tuna, add some with a little extra flavor (I picked hickory smoked). Mustard gives it a little pizazz too :)
