This is a leaner version of an old favorite. I replaced the majority of the mayonnaise with plain yogurt.
These yummy meatballs look and taste great and are loved by kids and adults alike. The recipe is from Jean Pare's cookbook (minus the salt) and I have been making these for years as my husband loves to fish. We use home canned Coho, but any red salmon will do. Serve with a crisp green salad and whole grain buns to sop up any extra sauce.
A light citrus flavor makes this dish a delight by itself or diced over a salad. High in protein.

This is the way my mom used to make them. The patties are best cooked in a cast iron skillet, but a regular pan should be okay too.
