This is a fast and easy meal to make on a weeknight after a long day at work. I love to make this with a big batch of fresh zucchini and onions!
Feel free to try with various smoked or tinned fish and fresh or frozen vegetables to your taste. Or use white fish plus smoked cheese. Add fresh or dried herbs, too! It is delicious served hot or cold and easy to pack in a picnic or lunchbox.
To reduce the sodium content I omit the pickle/relish and add dill and instead of mayo I used greek yogurt. This is great on cucumber slices, inside celery or tomatoes. You can eat it on a bed of lettuce or between 2 slices of whole grain bread. Try it in a pita.

1.5 gallons of water. Boil lobster bodies and shells to get half a pound of lobster yield and a gallon of liquid. ( I used 7 bodies). Cube Potatoes & dice onions, & cook 3 minutes in microwave. Add cubed fish and evap milk. Salt & pepper. Simmer for 1/2 hour. Yields 18 cups

Replace chinese leaf with savoy cabbage for a crispier texture.
