This is a slightly spicy little number... perfect for supper. I just cooked this up to use up some of the veggies in my fridge that were starting to look tired and I believe it will be in high rotation in my household. Enjoy!
Place cod (or scrod) fillets in glass dish. Crush 25 Ritz Crackers in place in a bowl. Add melted butter and cheese and mix well. Place cracker mix on top of fillets and bake at 350 for 15-20 minutes. To assure even cooking, "tuck" the thinner end of the fillet under to create an even thickness of fish.
This is a great, light take on traditional tuna salad. It's very creamy although the yogurt gives it a bit of brightness with a bite.
