This recipe is an attempt to duplicate the Mt. Vernon Stable Restaurant in Baltimore's special of the day I had. It was so delicious I couldn't stop thinking about it. I used Garlic and Herb low carb tortillas for mine.
The sodium in this recipe came out fairly high. Will have to see if substituting a different brand of sun-dried tomatoes and cheese will help lower it. All suggestions are welcome!
My mother-in-law's recipe with reduced fat mayo and lower sodium Old Bay Seasoning.
Note: Even with the lower sodium seasoning, these still have a lot of sodium from the crab meat.
-Cook the octopus with a onion and salt take it off when the onion is cooked
-keep the water for cooking the octopus
-saltee the rest of the onion the garlic and the chilli powder .in the olive oil until onion is soft .
- put the water from cooking the octopus 3 cups for each cup of rice salt and the bay leafs
- when itīs boiling put the rice in and stir , cook for about 13 minutes and just before cooked put the octopus in
- serve right away
Some people put some red wine with the water to cook the rice for flavour i prefer without it
Bake seasoned Mahi Mahi in foil for 20 - 25 minutes. Then flake into other ingredients and simmer until blended. I add a lot of pepper and some kosher salt
This is a great low cal, high protein breakfast that beats the calorie, carb and sodium values. Throw in a cup of coffe, a slice of Oroweat 50 calorie whole wheat toast and some "I can't believe it's not butter" spray and you have yourself a well rounded meal that energizes you for the day. I throw in a couple of sliced, fresh strawberries on the side as well.
