An updated, scaled up variation of my Sauteed Asparagus and Mushrooms in a Lemon - Thyme Butter recipe, using vibrant, steam-blanched carrot coins in place of mushrooms and a touch of rosemary with the thyme.
This is my mom's recipe for paella that we used to make every New Year's Eve as a celebratory meal. It's a bit pricey, definitely exotic, but well worth it for a special occasion.

Sesame seed laced butter cookie dough is amped up even further by the use of orange juice in place of milk or water. Honey mixed with egg and milk glazes the tops before baking to sweet deliciousness.
We made these at school for the start of the 2014 Sochi Olympics, since the cookies are ring shaped and are based off an ancient Greek celebration cookie (according to my recipe card from Home Ec 16 years ago!)

This is a very finicky pasta, made with 4 different flours and beet juice, but the flavour and colour contrast with the herbed ricotta and pumpkin filling is so divine it's worth the effort! I would portion about 8-10 squares per person as a side dish, if you can stop yourself at that! The resting time is important with the dough too (and it will keep in the fridge for 3-4 days well wrapped), and the filling can be made ahead and frozen also.
Makes 100 Ravioli, 10 servings total.

This recipe is just my own version of a basic recipe that I used to use on Allrecipes.com. I've altered flavors and changed some ingredients to try and lower calories - but this is all new to me to don't judge me to harshly pleeze! Also, I didn't add icing to this recipe because I figured you can do that yourself if you wish. You can alter flavors to your own likings as well and I'm sure most of you can probably knock off even more calories than I did already. But this is moist and delish! My picky husband whom will only eat chocolate has eaten several already. Enjoy!

*Note: These cookies can be stored on the counter for a few days, but I found that they get even softer after a few days at room temperature, so they are best stored in the fridge for the longest shelf life.
Made this for a Burns Night supper, instead of Haggis. Went over very well! The bacon is a great substitution for sheep's stomach :)
Use roasted green chili's. Some markets sell them in the frozen foods section. Brand: Select Green Chili. If you can buy them fresh roasted that's even better!
