In my quest to get more "bang for my buck" (calorie-wise), I've been adding more low-calorie vegetables to my diet. I find mushrooms to be especially satisfying and versatile. I came up with this recipe after picking up a package of beautiful white mushrooms from Costco. They were too big and pretty to cut up, so I decided to stuff them with ingredients I happened to have on hand. I used precooked packaged shrimp which decreased the prep time. Figured it also needed a bread component, but didn't have any bread crumbs, so I crushed a serving of croutons. Either one will do.
Overall, I was very pleased with the outcome. If you don't like shrimp, leave it out or add another protein such as crabmeat or leftover chopped chicken. You can also substitute your favorite cheese if you don't care for parmesan (I'm thinking of trying feta cheese next time I make these).
I'm not going to lie to myself, I'm not giving up pizza. However when I have it will be homemade. This is the base. Making two (2) pizza's...the sauce and topping are up to you!
5 chicken Thighs 1 Box Stuffing any flavor follow directions on box but don't cook stuffing Just roll each piece of chicken with the stuffing then fill the pan with what is left of stuffing bake at 350 for about 1 hour or till done serve with a nice salad of your choice and serve carrots on side

I love cheese cake. I love baked cheese cake. I am determined to create one that will suit my needs with less calories, and less fat. This will be experiment 1 trying yoplait light fat free lemon cream yogurt in the filling, and Quaker Honey Graham oh's and no added sugar in the crust.
Result: This is a very soft textured cheesecake, more of a custard than a cheese cake with a light flavor. The cereal crust is a little sticky, but not bad.
