Introduction

I love cheese cake. I love baked cheese cake. I am determined to create one that will suit my needs with less calories, and less fat. This will be experiment 1 trying yoplait light fat free lemon cream yogurt in the filling, and Quaker Honey Graham oh's and no added sugar in the crust.
Result: This is a very soft textured cheesecake, more of a custard than a cheese cake with a light flavor. The cereal crust is a little sticky, but not bad.

Ingredients

    Cereals ready-to-eat, QUAKER, HONEY GRAHAM OH!S, 2 cup s
    1 pkg. Non Fat Cream Cheese-8 Oz softened
    2 large Egg, fresh
    Granulated Sugar, .5 cup
    Vanilla Extract, .5 tsp
    Butter, salted, .66 cup (2/3 cup melted)
    yoplait light fat free lemon cream pie yogurt, 12 oz (2 containers)

Directions

Place 2 cups of cereal into a plastic bag and crush into crumbs. Mix with melted butter and press into bottom of buttered pie pan, or spring form pan.
Beat sugar, softened cream cheese, 2 eggs, 2 containers of yoplait light fat free lemon cream pie yogurt with 1/2 tsp of vanilla. Pour over crust. Bake at 350 for 60 minutes or til top is browning, not wiggling, and top is cracking a little.
This cheesecake has a light appearance, almost like a souffle and is not as heavy as some cheesecakes.
