This is a very yummy fresh salad - I don't add any dressing but you can to your own taste. You can also add or subtract any vegtable you like or in season. Do not peel the vegtables as most nutrients are in the peels (except for butternut squash and onion). Makes about 8 cups and lasts for a week in a plastic bag in the fridge.
All my life, I hated Ranch dressing! It was thick and goupy, and I didn't like the flavor (some brands are even sweet - ugh!). A coworker made ranch dressing using Hidden Valley Ranch mix, buttermilk, and mayo, and I discovered it was better than the bottled kind. I experimented at home by substituting 2/3 of the mayo with Greek yogurt and adding lemon juice. It came out tangy, fresher, and lower fat than using only mayo!
