This is great with chips, in a pita, on greens for a salad, or as a side dish. Good warmed up or cold.
I took my mom's recipe and made it healthier by substituting whole grain pasta and low fat mayonaise and salad dressing. You can mix it up by adding chopped bell pepper or other chopped veggies - this is the basic recipe to start from.
This is a regular item in my rotation of low-fat veggie dishes to eat with lunch at work.
A delicious lunch on its own or a side dish with dinner. Great for when you get tired of plain old salads! Does involve some cooking, but if you follow my instructions, you only get one pan dirty.
