Introduction

Ingredients

    1 can (about 2 cups) kidney beans, drained and rinsed
    1 cup frozen peas, thawed
    3/4 cup chopped scallions
    1/4 cup chopped fresh cilantro
    1 1/2 tsp ground cumin
    1/2 tsp Tabasco sauce
    2 tsp olive oil

Directions

Toss beans, peas, scallions and cilantro together. Add spices and oil, toss well. Refrigerate. Makes 6 1/2-cup servings.
