Here's a fiber filled salad with easily substituted ingredients perfect for summer picnics! I've reworked the traditional bean salad dressing to use less oil and add more flavour with the addition of balsamic vinegar. If you prefer a less sweet dressing, cut back on the Splenda as the balsamic vinegar adds some sweetness on it's own. Use whatever canned beans you have in the pantry or if you are feeling very industrious, cook the beans from dried. Enjoy!
