Although a little higher in fat than I would like, this taco salad is not only good on the protein, it is high in fiber too. Don't skimp on the cheese or sour cream beause that's where the protein in this dish comes from, in addition to the black beans. I eat this on a "long run day" and enjoy it's healthful mix of fats, carbs, and protein without any guilt.
you can easily changed up the spices on this recipe. I grated my red onion, not regular onions. I took a full fat recipe offline and altered it. I was going to use fat free sour cream but it does have more sugar. The light was just as good.
Open 2 cans of tuna and mix with Mayo and Weber Zesty Lemon Seasoning, black pepper.
Open a bag of Romaine Lettuce and spread on plates or on platter.
Sprinkle Parmesan Cheese and sliced black olives over lettuce
sprinkle Ceasar Dressing onto lettuce
Scoop Tuna and place in middle of Lettuce do not mix with lettuce
Sprinkle shredded cheddar cheese all over
