This recipe is a guesstimate. I prepared the my meatloaf on a broiler pan, the potatoes cooked under them in the pan. I assuming about 1/2 a cup of juice came from the meatloaf. Meat juice estimate is included in nutritional information, but not in ingredients list.
This was concived during a Just Say Yes to Fruits and Veggies Nutrition class(1/14/11).
we use biscuits for so many things, there had to be a low fat alternative! The yogurt works really well!
I was experimenting to re-create a healthy version of Noodles & Co's Buttered Noodles. Here's what I came up with ... I add some grilled chicken to round it out, but have not included it in the recipe.

Recipe is from the original Southern Living Cooking Light cookbook. The original directions said to bake 1 hour. That is too long for my oven. Start checking for done-ness after 30 minutes.

This is the blending of two of my favorite low calorie muffin recipes. I wanted something larger, more substantial, but didn't want to add too many more calories. These muffins are not too sweet, high in fiber, and practically fat free. For those counting WW PointsPlus, they are two points. If you like a sweeter muffin, you may consider increasing the sugar or adding packets of your favorite sweetener.
