Introduction

Ingredients

    3.5 cups Whole Wheat Flour
    3.5 cups KAF Unbleached All-Purpose Flour
    1.5 tbsp Active Dry Yeast
    1 tbsp Salt
    4 tbsp Molasses
    2.25 cups Water
    2 tbsp Olive oil

Directions

Dissolve yeast in 1/2 cup warm water. Combine 4 cups of flour with salt, molasses,olive oil ,remaining water and yeast water mixture. Stir until blended smooth. Mix in the remaining flour, do not knead. Allow dough to rest for 10 min. Knead for 10 min. or until dough is blistery. Allow to rise covered for 1 hour or until doubled. Punch down and allow to rise for 30 min. Divide into 2 balls. Allow to rest for 10 min. Knead each ball into preloaf shape and then place into greased loaf pans. Allow to rise to desired size( about an hour). Bake at 425 for 25 min.

Makes 2 - 21 slice loaves. Serving size: 1 slice
