Made this so I would have something to eat on my soft diet, it was gone with the bowl scraped clean!
Makes an 'excellent' dish for lunch or as a 'side' for dinner (1/2-3/4 serving amount).
The avocado adds a 'nutty flavour to the already 'aromatic' taste of the quinoa.
Be careful, it's tasty and very 'addictive' and too much of it can add up the carbs.

I took potatoes and diced them and thought they look lonely, so I added some corn and onions and spiced them up.
Homemade yogurt won't save you time, but it will save you money. You can buy a gallon of really good organic or local milk for less than $10, and you end up with a gallon of yogurt, whereas a gallon of good organic local yogurt would probably cost upwards of $30.
These are a great way to use up an extra beer or a 'fallen soldier' that didn't get drunk. Make sure to not use a beer whose taste you don't like, because the muffins will taste like the beer a bit too.
